The fire place dominates the room from its place at the back, with a simple yet warm décor, this address is perfect for all, for regulars as well as those on their way on foot from Bibracte to Alésia... Régis Bolâtre is a young creative Chef. He takes pleasure in explaining his cuisine and his story, he impatiently awaits the moment when the plates come back to see if his guests are satisfied. This is a man of tradition who knows how to welcome guests and that art has been passed on through several generations: his great grand father was a maitre d’. His father, then in charge of the Auberge du Cheval Blanc, loved to go through the book of delicious recipes and good manners passed on by his ancestors. He naturally turns to the cooking profession. The Chef is from Burgundy, born in Bresse and his know how is traditional, of excellent quality. He respects his region and its products... He is serious at a job he learnt with his master Alain Chapel. Our Chef innovates with poultry from Bresse or meat from the Charolais region. The establishment is authentic and the welcome is perfect thanks to Angélique, who is really attentive to all guests. This is truly a special place, and the excellent menu composed for ideal gourmet guests introduces the most delicate palates to the house’s specialties, according to the market and the season. And of course the wines are there, we are in Burgundy after all.
